My run was good! I decided to do my usual weekday uphill out/ down hill back path to make myself go out slower. It worked! I handled unfavorable splits in the second half over the very first half. I never do that!

I didn’t take photos of all my fun at Disney world because I was trying to be in the moment. (Yes, a weird concept for someone glued to social network most of the time.) but I know a few of you world travelers would appreciate the highlights of my stay and eats.

New balance put us up in The Grand Floridian. The Grand Floridian is swaaaaanky to this girl. As soon as you arrive several cast members greet you “Welcome Home!”.

We shown up around dusk and the views and sunset were gorgeous!

The spaces are extremely nice, but not as elegant at the lobby. The service is what really sets this place apart – everyone was so friendly and helpful and quick.

The lobby is grand and they are starting to draw out the Christmas decorations. Camiseta Eintracht Frankfurt I spotted a few hidden Mickeys too!

As soon as I got the itinerary I called my mommy and told her where I was staying. We like Disney and understood this was a elegant place!

The Grand Floridian is where the legendary real Gingerbread house is located. It is refrained from doing yet, but nearly and we got a slip height and the awesomeness! now I am craving gingerbread like you don’t even know.

There is a wedding event chapel on the property and we saw several bridal celebrations over the weekend. (I heard that the altar has a view of the castle in the Magic Kingdom.)

One of the couples was chosen up after their ceremony by a horse drawn carriage. Fairytales do come true.

The hotel is a Victorian design and has several separate buildings, most spaces have incredible views of the water or courtyard.

It’s a great location, virtually anywhere you go there are gorgeous views.  I can’t believe this is my life!

There is a path between the GF and the Polynesian Resort. It’s supposed to be a mile but is cut a bit short because of construction. I like that NB sponsored the path in an effort to make this area friendly to people who want to stay active. The first morning SR and I tried to run off resort property and it was challenging. There were not choices to run on a safe sidewalk.

Dining at Disney and the race expo

On Friday I started my day with some hotel room cereal. I was going to take a picture, but figured you might have seen cereal before. If you haven’t, google it.

We hit up the expo at the wide world of Sports. It was the usual ‘big race’ expo and featured a few of my favorite business like sport Hooks. They have remarkable marathon medal holders.

The Run Disney expo is the only place to get the limited edition new balance Disney shoe. The NB reps told us they made 1,000 when they first made these and they offered out on the first day.

NB is working on a new shoe for 2014. It’s also going to have a special RunDisney / new balance box. You can inspect out a lot more on their marketing video.

Running in Orlando and Jenny Simpson

Then we made our method to the new balance field.

The charming team from new balance organized a lunch for us ideal on the field. This was incredible because Jenny Simpson was doing a track workout ideal beside us!

It was also lazy as we sat and ate while she ran so I stuck to one cookie as opposed to thirteen.

What Jenny Simpson eats

Jenny Simpson is the fastest female mile runner this year. She is amazing!! and she is also super sweet, I feel like I’ve satisfied her before but that might just be because she was so friendly.

After lunch we had a question and answer session with Simpson. She likes the new balance 1400s so I used them to the race to be fast like her. apparently running shoes don’t work exactly like that, but I did have a good race!

Any time I have the opportunity to ask a fitness superstar a question I ask this super crucial one:

What do you eat before and after your race? (or hard workouts)

Before races Simpson eats oatmeal or cereal like Cheerios. She also has something with caffeine, like tea before her runs.

After she believes in re-fueling as soon as possible. A dietician told her it’s not just the 20-30 minute window after a workout – you must try to eat ideal away. She does a smoothie, chocolate milk (!) or yogurt ideal after.

She also talked about running at night or different times of the day. This is standard for a track professional to have to run at different times.

She stated not to concern about what food is Camiseta Corinthians Paulista proper for that time of day (don’t feel like you have to eat dinner food) and eat what works for you before a run.

On Saturday night we had dinner at The Wave in the contemporary Hotel. We took the monorail there from our hotel and it was super convenient.

(I had two glasses of white wine that missed the camera.)

My favorite course of the night – CRAB CAKES! gets me every time.

The next day we had brunch at the Grand Floridian convention center. It as delicious!

Fun fact: Mickey shaped food just tastes better!

On Saturday we explored animal Kingdom.

And then SR and I spent a bit bit of time at the Magic Kingdom. They are just starting to embellish for Christmas, but the tree isn’t up yet. This makes me really want to go to Disneyland for Christmas. It gets me in the spirit!

SR was the official photographer because is responsible with her cam phone and I am not.

On the method back I stopped solo at the Polynesian resort for food. I went to Capt Hooks and got some veggies and a salad to go.

I wouldn’t recommend this place, it’s a quick service restaurant with limited options.

I got a special delivery of chocolate covered strawberries to the room on Saturday. Um, finest day ever.

I used my sweet Potato Pancakes recipe, but used pumpkin instead of sweet potatoes. I also sprinkled chia seeds right on them while they were in the pan.

Last night I made zucchini pasta with tons of onions as well as a jarred sauce. It was amazing. I understand onions make ya stink, however I like them. as well as they are truly great for you.

Thai classic – Tom Kha Gai

The second challenge for project Food blog is called “The Classics”. You are supposed to choose a classic dish from another culture, something that’s outside your comfort zone.

Since my comfort zone is obviously eating chocolate almond butter right out of the jar I figured pretty much anything Camiseta Leicester City that required me to actually cook would be game.

Actually, I think Mexican food is my comfort zone so I wanted something different from that.

I brainstormed a few ideas, and finally decided to make something that uses coconut since I’m married to a coconut addict. It’s a real disease and he needs help.

I made Tom Kha Gai – Thai Coconut soup. since I wanted to make it authentic I had to make a trip to our local Asian market to get the ingredients. shopping is usually my specialty, but it helps if you can read the labels.

  I also got distracted by this cleaning product. What is a Pon Pon and why have I not been washing mine?

Luckily I was able to recognize coconuts and the other required ingredients by sight and a little help from the workers. Bonus: Fresh coconuts were on sale!

And apparently you can buy dead porcupines here?

Anyways, I walked out of the market with everything I needed to make an remarkable Thai classic.

The next problem was figuring out how to cook with these new ingredients. The recipe I used didn’t explain how exactly to cut the lemon grass. I took a guess and cut it in half to infuse the broth.

 

Despite my efforts to get away from my Camiseta Kawasaki Frontale usual Mexican dishes, it seems a key ingredient in this soup is from Mexico. Represent! 

I chopped up the goods and added them to the broth. This dish was surprisingly easy to make once I got past the “thinly slice the ginger” part. I’m bad at slicing. I’m also bad at hacking apart coconuts.  I had to call in some help for that part. I wanted to use it as a serving bowl for my soup and this required a little extra arm power.

Basically, you slice up the ingredients; juice the limes and simmer everything until all the flavors have melded together.

I garnished the soup with cilatro and served it in a coconut bowl.

I left the coconut meat in the coconut on purpose. I was hoping it would infuse the soup with a little extra flavor and it did!

My first attempt at a Thai Classic, Tom Kha Gai was a success!

But, I think the resident coconut lover should be the judge of that…

I’ll take the empty coconut bowl as his approval ?

The expo was held at a local running store and they were offered 10% off if you were there for the race. since Ben was with me I couldn’t do too much damage but walked out with a new water bottle and some Gus.

Then, we made a mandatory pit stop at Sonic for diet Dr. Pepper while running other errands.

The rest of my day consisted of cleaning and randomness. It was a good Saturday. For our second date night of the weekend Ben and I went to see Forks Over Knives. I cannot resist the Siren’s smell of movie theater popcorn Camiseta Real Betis Balompie and don’t even try.

Yes, I see the irony of watching a movie about eating healthy while shoving my face with popcorn and diet soda. and no, I don’t care enough to change those behaviors. Aren’t you thankful though? no one wants to be friends with someone who has no vices. I’m really doing it for you

Post movie Ben and I hit up The Veggie Grill for dinner. I got the All Hail Kale with Tempeh. Their tempeh is the best thing ever. Plus, the salad comes with agave roasted walnuts. between the outstanding tempeh and the pro-veganism movie Camiseta FC Utrecht – I’m considering going back to the veggie lifestyle.

So, I contemplated veganism while eating fro-yo. I know it doesn’t make sense, Camiseta Yokohama F. Marinos but 97.4% of the things here really don’t anyways.

I have opinions just like ever other random person in blogland on the movie Forks Over Knives, but I’m more tired than Vegas. I’ll write a “real” post tomorrow. Is anyone else now wondering what they look like mid-yawn? No, just me??
